CHARACTERISTICS: CONDIMENTS AND SPICES
Thanks to the contrast of temperature, the ripening period of the grape is long. Throughout this time the formation of the coveted tannins and anthocyanin, the polyphenols that give the grape its color and structure, are developed. From this careful assembly we get pale, fresh, and aromatic whites; clear and fruity rosés; and, above all, reds blended with Bobal and Tempranillo, Syrah, or Cabernet, perfect for barrel aging.
AREA OF PRODUCTION
It occupies the estates of 70 municipal districts located between the Júcar and Cabriel rivers, to the southeast of the province of Cuenca and the northeast of Albacete province, including the fields of the Albacete capital, itself, and its neighboring areas, and, in Cuenca, Motilla del Palancar as its epicenter. The vineyards grow in the meseta, at an altitude between 600 and 700 meters above sea level, in a dry climate under a strong sun that at night gives way to the fresh and humid winds of the Mediterranean.
