Saffron from La Mancha
The saffron from La Mancha is much more than a spice with an intense aroma, unique in its variety because of the special roasting over low heat, which strengthens all its natural qualities. Renowned as among the best in the world, it is in our land where 90 per cent of the world crop is grown.
Saffron is also in Castile-La Mancha a whole ancestral culture, still alive, because of the special characteristics of its farming and harvest. A harvest which must still be done by hand, harvesting everyday its flowers, during autumn. And separating afterwards its pistils, the saffron threads, from the petals. One by one, hand in hand.
Saffron gastronomic, historical and traditional culture, unique from Castile-La Mancha, has originated such important celebrations as the Saffron Crocus Festivity in Consuegra, Toledo province.
