El Mirador has designed a menu based on the recipes from shepherds and hunters from Atienza region, using its raw material and adding the exquisite touch of contemporary cuisine. Within this conception, we must highlight its game recipes, rabbit scented with rosemary above all. An important contribution is also, at the start of the hunting season, the local mushroom varieties and the seasonal dishes where roe deer and wild boar meat plays the leading role.
