Description
Morteruelo is one of those dishes from Castile-La Mancha able to take back delicacies from former times to enjoy them nowadays. It was already mentioned in a document as ours and as old as the Molina -de Aragón-Fuero(regional code of laws) from the 12thcentury.
Its main components are game and pork liver. From their cooking along with spices and bread crumbs, and from the result of their shredding in a mortar, you get a paste with a smooth texture, exquisite if you also spread it on bread. Tasting it is a must.
