In order to know the history of Las Llaves, you must take yourself 400 years back, to when Philip II came to the Casa Palacio Ramírez de Arellano, from the 16th century, in the town of Marchamalo, less than 3 Km from Guadalajara and very close to Madrid. Located in the middle of the Valley of the Henares River, this space with more than 1000 meters of garden, two Castilian patios, combines gastronomic experiences with serenity and contact with nature. The baton is carried by María González and Roberto Barros, leader of the team that takes care of ensuring that the diner will enjoy what they offer.
The kitchen retains the essence of Castile-La Mancha with avant-garde notes. Among the deeply rooted traditional ingredients of the area are the boletus (mushroom) de la sierra de Guadalajara, queso (cheese) de Solanillos, cordero y cerdo ecológico (eco-friendly lamb and pork) de La Mancha. Some of their dishes are colmenillas a la crema de foie (mushroom with foie cream) or muslitos de codorniz con soja (quail with soy), and for the final touch, nothing better than something sweet like caramelized pears with coffee ice cream, temptations that you cant resist.
