The kitchen utilizes natural and seasonal products of the surroundings, carnes de ciervo (venison), jabalí (wild boar), corzo (roe deer), perdices (partridges), cabritos (young goat), corderos (suckling lamb), cerdo ibérico (Iberian pork), setas y verduras frescas (mushrooms and fresh vegetables), cheeses, fruits and a great cellar of wines from La Mancha.
