A typical dish for snowy days in the province of Albacete, above all in the mountains, with a base of desalted cod and olive oil; garlic, hard boiled eggs, oil, potatoes, and walnuts have later been added to the original recipe. It looks similar to a mousse, the texture is that of a potato purée, but it hides a potent flavor. You will find it in bars and restaurants in Albacete’s capital and province. Whether as a tapa at the bar or a dish for the table, it is customary to order it to share.
