With a deep aroma, an intense bitter and sweet flavor, and a firm and fleshy texture, the wild asparagus is not only one of the delicious components of many gastronomic recipes from Castile-La Mancha. Its properties make it especially recommended to lower the blood pressure.
From end February, they grow wild in our fields, and going around to pick them is a delight for the eyes and for the spirit. But they also appear in all the restaurants, in an omelet, accompanied by shrimps, and in another thousand presentations only limited by the cook’s imagination.
