Already in the 16thcentury, Toledo marzipan was mentioned and even nowadays mouths water when it is mentioned. This sweet, handmade with ground almond and sugar, is one of the most typical gastronomic delicacies from Castile-La Mancha.

Although in Spain is mainly eaten during Christmas, in Toledo is the sweet par excellence and is made and sold all year long. Each bakery has its own special touch, although the basis for the marzipan dough is always half sugar and half almond. One of its most characteristic presentations is the "eel": with the shape of a rolled-up snake and decorated with crystallized fruit.
