La Mancha cheese
Only of La Mancha sheep breed, preserved pure in Castile-La Mancha, this delicious La Mancha cheese is made out. With unique flavor and properties, its manufacturing process has been kept unchanged over the years, and it is nowadays a delicatessen that our palate should not refrain from enjoying.
Aged between a month and two years, its varieties -soft, semi-mature or mature-, can be tasted as pieces wrapped in esparto, in oil, or natural, coming from Castile-La Mancha provinces in which its Protected designation of origin are made: Albacete, Ciudad Real, Cuenca, and Toledo.
