The kitchen utilizes natural and seasonal products of the surroundings, carnes de ciervo (venison), jabalí (wild boar), corzo (roe deer), perdices (partridges), cabritos (young goat), corderos (suckling lamb), cerdo ibérico (Iberian pork), setas y verduras frescas (mushrooms and fresh vegetables), cheeses, fruits and a great cellar of wines from La Mancha.
The philosophy is colorist, flavorful, perfumed and beautifully presented by a master chef. It is again underscored by the research and renovation of the preparation of these dishes.
The restaurant is characterized by its mountain-style decor, in addition to its carefully kept gardens.
